Apple Brown Betty

Brown Betty is a traditional way to serve fruit dessert. It’s similar to a fruit pie but much simpler since you won’t need to make a crust. The top crust is made from small cubes of bread toasted in butter with walnuts added.

Our neighbor brought over some of her mother’s “apple pie in a jar”. Home canned apple pie filling ready to dump in a pie shell and bake. So I decided Apple Brown Betty would be a nice dessert for a Saturday night at home (which seems like a rare occurrence these days). You can use your favorite fruit pie filling recipe to make this delicious dessert. We usually have whole grain bread in our home so that what I use. My mother made her Brown Betty topping with Pepperidge Farm white bread when I was growing up. Just about any good bread will do.

Apple Brown Betty
Makes one 10-inch pie

Ingredients
3 slices of bread with crusts removed and cut into ¼ inch squares

½ stick of unsalted butter
½ C walnuts chopped fine in a food processor

Directions
Preheat the oven to 350F.

Melt the butter in a skillet over medium low heat. Toss the bread cubes in the butter with the finely chopped walnuts. Set aside.

In a 10-inch pie plate, add your favorite fruit pie filling. Bake in the preheated oven for about 30 minutes, until the fruit filling is bubbly. Remove from the oven and spread the bread cube mixture over the top. Return the Apple Brown Betty to the oven for 20 to 30 minutes more – until the filling is done and the top has browned. Let cool before cutting.

Serve with vanilla ice cream, whipped cream or ½ and ½ . But it’s great just by itself, too!
