Monday Suppers

Monday nights at our house is usually a pasta night. Each one is different but uses the same technique: open fridge, see what's in it, chop it, cook it serve over pasta, garnish with Parmesan cheese.

This week Monday Night supper happened to be on Tues night. Lots of left overs to use up on Monday so supper was tasty but nevertheless a rerun.

Tonight I found a red and green bell pepper, yellow onion, yellow squash, sun dried tomatoes (actually oven dried last summer), marinated artichokes and three chicken-basil-mozzarella sausages in the fridge. I chopped the veggies into large 1/2 inch sized pieces. Started with a little olive oil in the skillet added the onions for a couple of minutes on their own, then the sausage to brown as the onions caramelized. Tossed in the rest of the veggies and cooked them for about 5 minutes more until they were still crisp. The sausage and marinated artichokes had enough seasoning to make it interesting. So I dished portions over thin pasta and voila! Supper in a half an hour. Ready precisely when Lois arrived home from yoga.
